Our butcher David's chicken mince is freshly minced in store using 100% free range chicken, it makes a great pizza topping!

Make pizza tonight using pita bread as a base and top it with our beautiful buffalo mozzarella that comes in fresh from Italy.

Chicken Pizza with Buffalo Mozzarella
Makes 4

Danny's pita breads
200g free range chicken mince
Olive Oil to drizzle
2 courgettes
2 tsp spice mix (hot chili powder, salt, paprika, ginger and coriander)
fresh oregano leaves
100g Italian buffalo mozzarella
fresh mint leaves
fresh basil leaves
salt and pepper to taste

Preheat the oven to 180C.

Drizzle the pita bread with olive oil and season with salt and freshly ground black pepper. Thinly slice the courgettes and fan it over the pitas from outside in.

In a bowl, mix the chicken mince with the spices + the fresh oregano. Spread evenly over the courgette.

Place the pita on an oven tray and cook in the oven for 8-10 minutes or until the chicken is just cooked. Remove from the oven and leave to cool for 5 minutes before topping with the buffalo mozzarella, fresh mint and basil.

Drizzle with a little olive oil and season to taste. Cut into slices to serve.

Pizza Mozarella

Traditional Italian-style mozzarella, perfect for pizza.. sure to melt into stringy goodness!

Parma Ham & Mozzarella Pizza
with Cauliflower Crust

Serves 2

400 gr Cauliflower florets
3 eggs
1 tbsp. Psyllium husks (a binder great for gluten free baking, available in store)
½ tsp. salt
100g Blue cheese
150g pizza mozzarella
130g Parma ham
Olive oil
Fresh herbs such as oregano, rosemary and thyme


Blend the cauliflower florets in your food processor until you have a couscous-like texture. Mix the grated cauliflower well with eggs, psyllium husks and salt.

Spread the dough on a baking sheet with a spoon and form a round pizza base.

Bake the cauliflower pizza base in the oven at 200 degrees for about 25 minutes or until lightly golden.

Pull the mozzarella apart and put it on the baked pizza base along with blue cheese.

Drizzle with olive oil and bake the pizza in the oven at 200 degrees for about 10-15 minutes, or until the cheese is melted and lightly golden.

Take the pizza out of the oven and finish with parma ham and garnish with fresh herbs and freshly ground pepper.

The discerning buyer’s choices at Christmas

We have great awareness when looking for sustainable and honest products to bring you every year. 
At Christmas time it is something foremost in our minds when selecting the meats and seafood you will serve your family and friends.
So here is a brief synopsis on what we offer you this Christmas.

The Christmas Turkey
Tucked away in North Canterbury, Canter Valley, is a free range turkey farm that works from a sustainable and environmental consciousness. Animal welfare is critical to their farming practice, which is why you will find the turkeys roaming freely and eating in fresh green paddocks.

 When the Turkeys arrive here for Christmas they are FRESH and not frozen.  We keep them in our chiller ready for you to pick up pre-Christmas day. 

The Christmas Ham
Our hams come from Free Farmed pigs in Canterbury.  We sell them on the bone, as a full ham or half ham.  The reason behind this is that ham off the bone is simply the moistest and most delicious way to eat it. This way you experience the full meaty texture and flavour of the ham.  On the days that follow Christmas, keep the left overs in a ham bag within the fridge and slice off chunks to fill sandwiches or put on platters to serve with condiments. It’s a real treat for days!

The ham is already cooked which makes it easy.   You can buy our delicious pomegranate, molasses and mustard glaze to take home. To prepare on Christmas day, line your roasting dish with grease proof paper. Then simply peel off the skin layer, leaving as much fat on as possible, to then score the fat lightly. Lather on the glaze and put in the oven to heat through. Voila you have a delicious hot glazed ham for the table on Christmas day.  It will look impressive and one might think you are somewhat of a Martha Stewart or Rick Stein.  It’s simple, delicious and you did it :)

The Christmas Salmon
From the deep waters and the seas natural current around Akaroa Harbour this salmon is farmed in a sustainable manner. The quality and integrity of the fish is kept by not overcrowding the pens and making their feed from high quality fish food. This is a healthy salmon and comes fresh from the sea farm to you, available in Queenstown only at Raeward Fresh or if you're dining in the top restaurants.  You can pre-order a whole or half Salmon to serve on the Christmas table.
Freshly made Christmas Cakes
OK who doesn’t love a home baked Christmas cake oozing with brandy, fruit and nuts… D - e - licious!  Jenny is good at this and has been baking traditional moist Christmas Cakes for years. Choose from traditionally iced or a glazed glacé fruit and nut topping.
